ABOUT

Born and raised in Seoul, South Korea, Ethan began his culinary journey at the age of nine. After training in Seoul, he started his professional career in 2020 before relocating to London in 2021 to further his development.

From 2022 to 2025, he was part of the team at KOL in London under Chef Patron Santiago Lastra, during which the restaurant ranked 17th on The World’s 50 Best Restaurants.

He has also completed stages at several internationally recognised restaurants across Europe and Asia. His cooking reflects a balance between Korean heritage, contemporary expression, and respect for tradition.
